Feeding my picky toddler lately has felt like a never-ending challenge. Here are some recipes I have recently tried and have had moderate success with...(hidden veggies for the win).

Veggie-Loaded Smoothies
Blend up spinach with fruit like bananas, pineapple or mango. Add a bit of yogurt or almond milk for a creamy texture. Your toddler won’t even taste the veggies and honestly, this is one of my favorite smoothie blends too so I make enough for us to share. You can give it a fun name for its green color too. -
Hidden Veggie Pasta Sauce
roast veggies like tomatoes, carrots, and onions. Then pure them into a sauce. Its actually super good, my husband didn't even know the sauce was basically pure veggies. -
Veggie Muffins
Make a batch of muffins using grated carrots, zucchini, or even sweet potato. You can add cinnamon and a touch of honey to mask the veggie flavor, and your toddler will have a healthy snack! -
Veggie Fritters
Shred vegetables like sweet potatoes, zucchini, and carrots, mix with egg, breadcrumbs, and seasoning and bake them. My daughter loves to dip hers in ketchup or ranch! -
Sweet Potato Brownies
This is not a recipe for anyone with a peanut allergy, full disclosure. But my brother in law makes super good brownies and all that is is them are sweet potatoes, cocoa powder, maple syrup, peanut butter and a few vegan chocolate chips sprinkled on top. -
Egg Bits
My daughter can HOUSE egg bits. I make them in muffin tins with eggs, garlic\, salt, pepper and an entire can of spinach (drained) and some cheese mixed in. She has no idea how much spinach she's eating lol. Of course every kid is different but these are a few healthy, veggie-filled ideas that my daughter has been enjoying and I hope its helpful if you, out of no where like me, got a picky eater on your hands!
